Where low-waste sustainable dining meets pure luxury.
Originally designed by architect Baron Theophil Edvard von Hansen for the 1873 World’s Fair, the historic Anantara Palais Hansen Vienna is now debuting fresh renovations as Vienna’s first urban luxury resort.
With 150 years of history embedded in its walls, the Anantara Palais Hansen Vienna retains much of its original Viennese Neo-Renaissance architecture, from its marble floors to its columns and staircases. The recent renovation has refreshed the hotel’s 152 guestrooms and suites, adding updated amenities, oversized windows, higher ceilings, and—in select rooms and suites—balconies overlooking the city.
Inside Anantara Palais Hansen Vienna, you’ll also find Michelin-star restaurant EDVARD, which offers a sustainable, low-waste, and utterly luxurious dining experience. Enjoy a refined 5-, 7-, or 9-course dinner designed by head chef Paul Gamauf with wine pairings selected by head sommelier Klaus Lechner.
Chef Paul and his team forage ingredients from wild forests and meadows or source from artisanal producers in neighboring regions to create only the freshest dishes that also minimize environmental impact. All dishes are inspired by Viennese tradition, international techniques, and a nose-to-tail philosophy, a sustainable approach to cooking that uses every edible part of the animal to minimize waste.
While you won’t want to pass up the extensive international wine menu, which has a focus on Austrian and local wines, EDVARD also offers unique juice pairings, which have been fermented, steamed, and further support the restaurant’s sustainable mission.
For the perfect blend of nature, luxury, innovation, and only the finest culinary craft, the Michelin-star EDVARD in Anantara Palais Hansen Vienna Hotel is a must-visit the next time you’re in Vienna.
